How to Store Dates: Room Temperature, Fridge or Freezer?
Dates keep well, but how you store them decides whether they stay soft and glossy or turn dry, sticky or sugary. This guide explains how to store dates at home – unopened, after opening and in the freezer – and what the white spots that sometimes appear on dates actually are.
The short answer: keep unopened packs in a cool, dry place away from sunlight. After opening, keep soft dates such as Kimia, Kalmi, Fard, Medjool and Ajwa in an airtight container in the fridge. Firmer, semi-dry dates such as Zahidi are fine at room temperature in a closed container. For storage over several months, use the freezer. And always go by the best-before date on the pack.
Why storage matters: soft and semi-dry dates
Dates differ a lot in moisture. Soft dates such as Kimia are moist and sticky; semi-dry dates such as Zahidi are firmer and drier (see our guide to the types of dates in India). That difference affects how long they keep. According to the University of California's postharvest centre, soft varieties keep for only about half as long as semi-soft ones at the same temperature (UC Davis).
Three things shorten the life of dates at home:
- Heat – warm kitchens speed up loss of quality and encourage sugar spotting.
- Dry air – an open pack dries out, and soft dates turn hard and chewy.
- Moisture – damp spoons, wet hands or humid air make dates sticky and can lead to mould.
How long do dates keep?
Temperature makes the biggest difference. These are UC Davis figures for semi-soft dates (the group that includes Zahidi), stored whole at the right humidity:
| Storage temperature | Semi-soft dates (e.g. Zahidi) | Soft dates (e.g. Medjool) |
|---|---|---|
| 21 °C (cool room) | About 1 month | About half as long |
| 15 °C | About 3 months | About half as long |
| 4 °C (fridge) | About 8 months | About half as long |
| 0 °C | Up to 1 year | About 6 months |
| –18 °C (freezer) | 1 year or longer, for all varieties | |

Many Indian kitchens are warmer than 21 °C for much of the year, so dates kept on the counter will not last as long. The best-before date on your pack always comes first.
How to store each variety
| Dates | Unopened | After opening |
|---|---|---|
| Kimia, Kalmi, Fard | Cool, dry place away from direct sunlight | Refrigerate to keep them fresh (as printed on our packs) |
| Zahidi | Room temperature (as printed on our pack) | Room temperature, in a closed container |
| Medjool, Ajwa | Cool, dry place away from direct sunlight | As soft dates, an airtight container in the fridge is the safest choice |
| Gift boxes | Cool, dry place away from direct sunlight | Close the box after opening; move leftovers to an airtight container |
Storing an opened pack: step by step
- Close it properly. Snap the lid of the tub shut, or move the dates to an airtight glass or steel container.
- Choose the spot. Soft dates go in the fridge; semi-dry dates can stay in a cool cupboard away from the stove and sunlight.
- Keep them dry. Use a clean, dry spoon or dry hands. Water on the fruit invites mould.
- Warm them up before eating. Dates from the fridge feel firmer. Leave them out for 10–15 minutes and they soften again.
Can you freeze dates?
Yes. For storage of several months, the freezer is the best option. UC Davis recommends a moisture-proof container in the freezer, which keeps dates in better condition than the fridge. Because dates are so high in sugar, freezing does not spoil their texture the way it does with many fruits (UC Davis).
- Pack them in a freezer box or zip bag and press out the air.
- Pit them first if you plan to use them in smoothies or cooking – frozen pitted dates go straight into a date and avocado smoothie.
- To eat them as they are, thaw them at room temperature for a short while.
White spots on dates: sugar or mould?
Sometimes dates develop small white or grainy patches. Often this is sugar spotting: natural sugars crystallising under the skin and in the flesh. According to UC Davis, it does not change the taste, although it makes the texture grainier. It happens faster when dates are kept above 10 °C or in dry air, and it can be reversed by gently warming or steaming the dates (UC Davis).
Mould is different. It looks fuzzy or powdery, may be white, green or grey, and often comes with a sour or fermented smell. Mouldy dates should be thrown away.
How to soften hard, dried-out dates
If dates have dried out, soak them in warm water for about 10 minutes, or steam them briefly. Pat them dry and use them straight away – softened dates are ideal for blending, ladoos or khajur barfi. Don't put soaked dates back into storage, as the extra moisture shortens their life.
Signs that dates have gone bad
- Fuzzy mould or unusual coloured patches
- A sour, alcoholic or fermented smell
- Insects, webbing or tiny holes
- Past the best-before date on the pack
If in doubt, throw them out.
Frequently asked questions
Do dates need to be refrigerated?
Unopened packs don't – a cool, dry place is enough. After opening, soft dates such as Kimia, Kalmi and Fard keep better in the fridge, and our packs of those varieties say to refrigerate after opening. Semi-dry Zahidi dates can stay at room temperature.
Can I store dates without a fridge?
Yes, for a short time. Keep them in an airtight container in the coolest, darkest cupboard, away from the stove. In hot weather soft dates lose quality faster, so eat them sooner.
How long do dates last after opening?
It depends on the variety and the temperature. Cooler storage keeps them longer, and soft dates keep for a shorter time than semi-dry ones. Follow the best-before date and check the dates before eating.
Can I freeze Medjool dates?
Yes. Freeze them in a moisture-proof container or bag. Freezing keeps their quality better than the fridge for long storage.
Why are my dates sticky?
Soft dates are naturally sticky, and warmth or humidity makes them more so. Keep them in an airtight container in the fridge.
Store them right, enjoy them longer
Keep packs cool, dry and closed; put opened soft dates in the fridge; and use the freezer if you want to keep dates for months. Our dates come in food-grade tubs that close tightly between uses.
