Banana Date Loaf

Naturally sweet, soft, and moist, made with ripe bananas and Kimia Dates

This wholesome banana loaf is fruit-sweetened and packed with the goodness of Kimia Dates. No refined sugar, no fuss, just clean, comforting flavors perfect for breakfast, snacks, or even a healthy dessert. It’s dairy-free, can be made gluten-free, and tastes even better the next day!


Ingredients:

Dry Ingredients:

  • 1½ cups whole wheat flour or gluten-free flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp cinnamon (optional)
  • A pinch of salt

Wet Ingredients:

  • 3 medium ripe bananas, mashed
  • 1 cup Kimia Dates, pitted and soaked in warm water for 10 minutes
  • ¼ cup oil (olive, coconut, or neutral oil)
  • eggs (or flax eggs for vegan version)
  • 1 tsp vanilla extract

Optional Add-ins:

       ¼ cup chopped walnuts or dark chocolate chips

       1 tbsp seeds (chia, flax, or sunflower) for a crunch


Instructions:

  1. Prep Your Pan & Oven
    Preheat the oven to 180°C (350°F). Line a loaf tin with parchment paper or grease it lightly.

  2. Blend the Dates
    Drain the soaked Kimia Dates and blend into a smooth paste with a splash of water if needed.

  3. Mix the Wet Ingredients
    In a large bowl, whisk together mashed bananas, date paste, eggs, oil, and vanilla.

  4. Combine Dry Ingredients
    In another bowl, mix flour, baking soda, baking powder, salt, and cinnamon.
